I was dissapointed that i did not start watching the next iron chef when it strarted but i flipped to 56, saw you guys in the kitchen and i was hooked i am currently watching season two of the next iron chef. and iam routing for chef mehta. but if you have to judge the two chefs at the end and if chef mehta is there i hope this doesnt give an edge over chef mehta. but i am going to wrap this up, congratulations and i hope to see you showing up some people on ica. one last thing if you can post on this website and if you have time. I just watched the new show "The Best Thing I Ever Ate", The Totally Fried episode, where you were honored for your Fried Brussel Sprouts. It sounds absolutely wonderful. Would you be willing to share your recipe? You said the vinagerette had red wine vinager, capers, anchovy & oil but I didn't catch the rest of the ingrediants nor did you give mesurements. Also, I believe you said you use lard to fry the brussel sprouts.

I am not much of a television fan at all, but I would put Besh's Restaurant August against any place in Cleveland, no offense. New Orleans is a food mecca and John Besh excells in that arena. In addition, he served this country in the first Gulf War. Maybe he's not the next TV star, but I'd pay for his meals, boring or not, over Symon's
All the hard work has paid off. Congratulations! You are an Iron Chef and that makes you one of the best around. You showed you are a true culinary force to be reckoned with. Much success for the future. Go gettem' cuz
Re: Iron Chef finale and Endangererd Swordfish!

I think it's really shameful and sad that endangered swordfish was the
product chosen for the last Iron Chef challenge. And the fact that you
didn't have the journalistic strength to question the choice makes me wonder
about your integrity.
Chefs all over the country are looking for alternatives to serving
endangered fish. The Endangered Fish Alliance has a section by "Concerned
Food Professionals Looking for Sustainable Options.: Here is what they say.
"Swordfish are usually caught on longlines, which kill both the adults and
the young — also, many tuna, sharks and sea turtles. There are federal
limits on U.S. fishing but the worldwide stock is still threatened. In 1960,
an average swordfish weighed over 150 kilos, now it only weighs 49 kilos –
and over half the North Atlantic population is too young to breed. Also
swordfish may not be good for people: it has a high level of methylmercury
which causes cancer and is a known reproductive toxin."

i am making a comment concerning the judges that judged sunday night's iron chef on 11/24/07. to the white head distinguished looking gentelman. must he always dissagree with every women judge that comes on the show and tell them how they think the food taste to them. everybody has their own taste buds, let him know for me. personally i think a old boot will taste good to him. he cleans his plate every time. i think he comes hungry, you can not judge foods when youre hungry, because most things you eat when youre hungry taste good to you. love all of you.
So disappointed that Chef Besh did not win….I will no longer be watching ICA. Chef Besh was by far the most superior and talented. I hope to see him on another program maybe Top Chef.

To all those Besh fans, he had every chance but simply did not execute battle swordfish as well as he is capable and since he's a classic jerk in some senses, he buried himself, because if you are a jerk you had better have something that is absolutely amazing. Also, I think most of the other iron chefs/ show don't like Besh, and so like on Top chef, Hung was the Besh, ( although i think besh to be more of a jerk in comparision), but this time Simon ( unlike Dale and the other girl) executed brilliantly to outweigh Besh's expertise. If anything maybe all this will teach Besh that interpersonal relationship conduct is more important than he realizes, even at the highest level.
Please people, get over yourselves. This is a television show, not world peace. Conspiracy theories, indeed.. Michael Symon is smoking hot and way more entertaining than someone who can't stop telling you how great he is. I enjoy Iron Chef, but think of it kind of like professional wrestling, enjoyable, but not really "real"

I'm glad I'm not the only one who thinks Besh was robbed. I'm pissed off enough I won't be watching IC for quite a while if at all. Something was going on behind the scenes and I really wish I knew what. One one of the judges said Symon was a 2-1 favorite going into the last competition I knew something wasn't right.

The people there seem to out work, out produce and out smart, to a much greater extent than the rest of the word.
Yes we know, you have already begun whining and squealing. Jeolousy and insecurity will do that. And remember, while you sit on your ever widening prosterior comlaining, Men like Michael Symon continue to produce results.

Congrats Symon!! You were awsome amd a well deserved winner. I have never ate in your restaurant but making plans to check it out.
I'm curious about all the Besh-lovers/Symon haters that insist that Besh was better. Perhaps he was in the final, but this was about the whole contest. Symon won four times to Besh's one. And I'm not sure what people are seeing about Symon being arrogant. Yeah, he's got an odd laugh (personally, I like it a lot), but as far as I remember, he was always about the competition–he didn't try to knock anybody, he just got out there and worked his butt off, and showed his personality at the same time.
Yeah, if anyone decides to eat at Lola or Lolita, please eat before you go, as the portions are so small you will leave hungry, and a burnt hole in your wallet.

WOW, Symon rocks! My husband and I have been venturing to Lola (now Lolita- in Treemont) since 2002. We even got engaged there. Michael's food is impeccable; paired with the intimate atmosphere and oh! the wines.. hands down the best meal in the Greater Cleveland area.
I certainly hope that Iron Chef Symon's success will attract more people and restaraunt owners to Cleveland again. Can't wait to for my next meal prepared by the newest Iron Chef!
Wow, all these Besh lovers have obviously never had a meal at Lola or Lolita. Consistency? Please. You can't get a better meal in Cleveland.
And for all those who think the match was fixed? Boo-hoo.
Look, ICA is a sport, right? If an undefeated football team went up against a Wild Card in the Super Bowl, and the Wild Card won, would you be screaming that it was fixed?
All the episodes before fell away once the two chefs met in Kitchen Stadium. It was the cooking equivalent of the postseason. Records are wiped clean. Everyone's O-O. You don't get to pick your referees.
Truth is, Symon stretched himself and, if you read is blog, played the sport the best. He cooked to the judge's sensibilities. Besh did the same thing I've seen him do in every single epidsode. Good cook, great cook, best cook, he never shook things up.
And he obviously didn't have game. Or a game plan.
Symon deserves the win because he scored in all the right columns — great food, great game plan, winning attitude.
Sorry, Beshies. This one's in the record books. Better luck next season.
The contest seemed fixed from day one. Not as bad a fix as when Rachel Ray beat Giada (lik e that could ever happen), but still smacking of New York FN bias. When the first episode started I told my wife, based on pure talent, Besh will win it all, but based on Food Network "politics", it's either Symon or Sanchez. Both of them used to be on Food Network's "Melting Pot" with Cora. I don't think anyone who's had a contract with FN in the past should have been allowed to be a contestant. Since Cora's worked on the same show as Symon, she really shouldn't have been allowed to have any input on this. What a shame. Besh could have added a dimension no other Iron Chef past or present has brought to the table.
Congratulations to Chef Symon for a job well done. I knew the competition would be close, but I too felt from what I could see (not smell or taste) that Besh raised the bar a little bit higher than the others. His food was so creative and exceptionally beautiful to look at. Good luck Chef Symon! I know you'll do well!
I thought it was a very interesting challenge, since all the contenders had culinary smarts….what won ,I Thought, Was what come forth in the character of all who were in the contest….The winner, Michael, had mental toughness and a reasonably humble attitude….
All were likable and you could get in with the mood of each and feel bad when one had to leave….
I thought this last challange had less brutal elements…a kinder more gentle world. I liked the black tie of the last challenge….I like my own "black Tie" days or moods!

I was surprised and angry at the last judging of the next iron chef. It is so clear that Chef Besh is the better. What is this about not being as good in front of the camera as Symon? Symon with the maniacal laugh, bald head, and strange outfits? I do believe this competition was fixed, somehow. Symon never had to accomplish what Besh did. Symon absolute lost in Paris, his barbecue was squab on a communal plate. What would he have done with rabbit?
Besh was spectular! No one, not one of them prepared two dishes from their meats/fish/fowl. I believe it was an uneven competition all the way through.
Constentino was exceptionally creative — far better than Symon. Very disappointing. I will not be watching Food Network. I'm switching to public television and their cooking programs. Much more informative and not annoying as FN is becoming. Thanks.

I was sorry to see Chef Besh lose. I think he has the class and consistancy needed.
Chef Simon is so arrogant I hate to watch him. I was rooting for him ot be sent home almost from the beginning.

Looking over all these comments, its apparent to me that, overwhelmingly, most ICA viewers agree that Besh won this competition. And I again would have to agree with them. Consistency over a few "moments of brilliance" takes precedence. I would pose the question: do we go to a restaurant again and again because you hope for a "moment of brilliance" from the chef? Or do we go because the chef is consistently great? I would hope that this ICA show was not rigged like so many commentators here seem to think, but I do have to wonder. After all, Symon has hosted Food Network shows. And he did lose to Morimoto and Besh, in one of ICA arguably best competition ever, beat Mario Batali. I do believe, regardless, that the shows integrity has suffered. I also agree with the comment below that Top Chef has more integrity. At one point the competitors were being judged by the Dean and top instructors from the CIA. It doesn't get better then that!

Congrats To Iron Chef Symon!!! I've been hooked on the show since the begining…and was cheering Symon the entire way! My husband and i must have woken up the entire neighborhood with cheers of excitement when we saw Symon's Pic up there with the best!

I'm from Cleveland by the way and here's a little tid-bit..the Ruehlmann judge is from Cleveland and he just wrote a book on Symon. Favoritism…I think so! The show was set-up.
Do you guys remember when Symon was "almost" voted off the first episode, but Ruehlmann jumped down their throats about it. That's the only reason why he stayed.

Your performance as a chef impeccable. You kept your cool and professionalism under control. We especially liked your playfulness as this was much needed after a couple of chef meltdowns. What a sham! Besh's food was clearly more appealing and the judges said Symon hadn't even seasoned his properly. My children could have prepared some of his dishes, they looked so sloppy. The judging was pathetic and the judges themselves a joke. Both men were so self absorbed and annoying. The woman seemed out of her league. The series lacked the professionalism of Top Chef, a far superior program (with great judges).
I won't bother to watch Iron Chef now. Cat Cora – how is she an Iron Chef? All she does is use pretty plates and use the same ingredients each time. Bobby Flay is getting a little too cocky as is Alton Brown, who isn't as nice as I thought.
John Besh, you are my winner. Hold your head high…or get a huge tattoo and grow a soul patch and maybe you'll get a job on FN.
I was pulling for Symon from early on in the competition (way before the final episode).
Besh was a worthy number two. You could kinda tell during the last episode that Besh kinda figured he wouldn't be the winner.
I felt that Besh was too "vanilla", figuratively speaking, to win. He's an excellent chef, but Symon's attitude allowed him to shine/excel with ease.
And Symon picked up on cues given during the earlier episodes as to what the Food Network wanted from the next Iron Chef… including creativity and use of the innovative cooking techniques.
It is encouraging to learn that I was not the only Iron Chef viewer that was dissapointed with the Next Iron Chef winner – Symon, Ijust want to know; "Why was the last vote on secret ballots, why were the viewers not allowed to see how the judges voted?" call me paranoid, but I smell bias conspiracy, and I will never watch this show again?

Seriously though, it's truly sad for Symon that he was selected. He'll now always be known, among his peers, as the man who defiled one of the greatest american chefs of all time.

He did have talent. He might have actually become a Chef if he had apprenticed under Besh for a few years. Now all he'll amount to is some TV schmuck with a fat paycheck.

While I'm not about to debate the ultimate decision of Food Network to hand the title "Iron Chef" to Michael Symon, I will debate the manner in which the entire series "The Next Iron Chef" was handled. I lost an incredible amount of respect for the Food Network because of this mockery. The judges chosen for the series may have had credentials on paper, but that was where it ended. They are three of the most inexperienced, ignorant, pompous people I have ever had the displeasure of viewing. Their comments were vague. Their comments were whiny. Their comments had nothing to do with anything that was going on in the series. The chefs knew it. I'm sure even Alton Brown knew it. Yet they were allowed to pass judgement (if you can call it that) on eight masters of the culinary universe. Why did it have to continue through six episodes? No. Why were they even allowed to air the first episode with those judges in the first place?
The finale was no different, unfortunately. According to the judges Michael Symon was more of an Elastic Chef, than Iron. Iron Chefs are steadfast. Constant. Consistantly good. The judges themselves mentioned that Besh was this — Iron. Where Symon on the other hand would roller-coaster from exceedingly good to exceedingly bad. Remember, I'm not debating the decision itself, I'm happy for Symon, I'm merely pointing out the piss-poor way the entire series was handled and presented — the finale was no exception. I will keep watching Iron Chef America to see how things pan out. I will cheer for Symon because I want him to succeed. But I will continue to hope the Food Network finds a way to pull its head out of its collective …pantry.
I would like to point out that most of the REALLY great chefs in the world have never been iron chefs. This is a television show designed to entertain. Even "popular" cooks like Julia Child, who was revolutionary in cultivating an appriciation of amazing cuisine and herself a very classy and entertaining woman, would have NEVER been considered "iron chef material". But televison shows will be canceled and TV personalities will be forgotten. Truely great chefs show professionalism, style, grace under fire, consistency, respect for their colleagues, and yes, sometimes, pride. Chef Besh demonstrated all of those traits and was not chosen. Time will tell if Chef Symon will earn the right to be remembered as a truely great chef, or just another television personality.
I really like Chef Symon as a person, but believe that Chef Besh is more accomplished and professional. Guess that's not what they were looking for.
Great competition from start to finish. These were real chefs, and fun to watch. In the finale, from the perspective of someone sitting on their sofa, not tasting the food, it could have gone either way. I like Chef Besh's personality and the pride he brings to his cooking. I also like Chef Symon's go-for-broke attitude. I assume Chef Symon's flavors were just a little bit more persuasive. I watched every episode of the original Japanese Iron Chef – loved it – and was nervous about the American version, but it's been impressive. To have Chef Morimoto taste your cooking? Scary!
Besh's food was better but boy was that Simon guy friendly lookin.

I was thrilled that Chef Symon won, I was rooting for him from the first show! I do think it was well deserved; he listened to what the judges had to say and progressively became an even better chef along the way. Besh is obviously also a great chef and there is no doubt he will go on to great things.

He was the better chef in a majority of the competitions, and his personality is big enough for kitchen stadium. Besh is annoying and would have hurt ratings had he won. Chef Symon is much more fun to watch, and his succulent variations reign supreme over Besh, hands down. The right man won!
I truly enjoyed watching the competition and was very happy to see that Simon win; however, both deserve it. I think Simon will bring something new and interesting to the plate.

I agree that the two chefs with the most potential to be an "Iron Chef" made the finals, but from watching all the episode's I thought that John Besh should have won. It did appear that Bobby Flay was biased against John Besh ~ maybe he is a little jealous and afraid that Besh could become a the iron chef favorite. And God knows the network wouldn't want to upset their big star! Symon comes off just a bit too brash and that laugh is very irritating. This all made for a fun little mini series, but I'm not convinced that that network didn't have the final say in who they wanted to be selected all along.
First – let's get the stories straight. Besh beat Batali (not Flay) and Morimoto beat Symon. So that negates the theory of why Flay voted against Besh.
The Iron Chefs, although mostly performing individually, are a team. Their reputation as Iron Chefs still rides on how well all of them do, not just how they each do. They are going to pick the best chef that they feel will help their team win. They picked Symon.
You can pick apart the comments that we saw on the show but remember, it's still an edited TV show creating suspense. And for most of the dishes, we actually only heard the opinions from 2 of the 3 Iron Chefs. The ones that Cat said needed more seasoning and then more garlic, were followed by Flay saying he wanted to keep eating it and Morimoto saying it was good. Plus you heard them remark three times for Symon that the dishes were Iron Chef quality, that it Rocked or that it was Punch, Punch Punch! Besh on the otherhand had dishes that also received good remarks but not to the degree that Symon did. He was lamented for not keeping the secret ingridient as the main taste and flavor and that he overwhelmed it's flavor a couple of times.
With that said, Besh is no doubt a phenomenal chef. However, they were looking for a Chef that holds true to the Iron Chef concept – that was Symon.
I, too, felt that Besh appeared pompous and overconfidant and hopefully it is not true just as Symon is not what some perceived him to be. Since when did a good chef have to fill the persona of a stuffy, white coated professional? So what, Symon is bald, has s goatee, wears black, has a different laugh and rides a harley. He atypifies the persona of a chef and brings to reality the fact that just maybe any of us could be what we want to be without the stereotypes. He's one of us in the greater sense of the word.
I feel that the Iron Chef shows with Symon will be nothing but entertaining and if you choose to use your remote, then that is your loss, as you will not only miss some fine competition of cuisine but also maybe the opportunity for a good laugh – which we all need to do a little more often.
Congratulations Chef Besh for making it this far and Congratulations Chef Symon on your win!
I will not be watching Iron Chef in the future. John Besh was by far the most elegant and consistent of the chefs, and I can't even stand to look at Symon's face! Symon is abrasive and rude and will definately drag the show down. When they unveiled his picture at the end, I winced. He looks like he belongs on "Diners, Drive-ins and Dives". John Besh is a class act, and a true French culinary artist. Chef Besh was obviously, too accomplished for IC, which I now will regard as the "Jerry Springer Show" of the Food Network.
I really think Chef Besh should have won the Next Iron Chef. I am very dissapointed and will not be watching the program no longer.
I beleive that Symon is a great chef, but i'd much rather eat John Besh's food every day.
Chef Besh and Chef Symon both were awesome and showed an amazing amount of respect for each other and that's how competitors should be, however in reading some of these post's about people not continuing to watch the show because their guy didn't win is a joke…people are slamming the show saying it offer's no eductional VALUE?? However if their guy would have won it would be the best show in the world. Get a grip some of you and be happy for whom ever won…don't pick up your binky and start crying.

Saddly, Chef Besh lost. Having bested Bobby Flay (who should have excused himself) and showing outstanding skills throughout the competition. He should have been the new Iron Chef. Unfortunately "TV personality" won out. My expectation is that Symon was selected in the hope that his bad-boy image would enhance viewership. A sad ending to a great competition, a sad chapter in the continuing saga of Iron Chef America

have stayed with the 3 judges that had
participated during the previous shows. If they were good enough for those shows why not the finale. Did you see Michael Symon make a desset at the last minute simply because one of the Iron Chefs requested it?

John Besh should have won. The Food Network seemed to have their own agenda and so did the unqualified, whiny judges. I've never seen or heard two men with so little personality or real food knowledge – truly terrible TV when they were on. I thought Bobby Flay sounded like a jealous brat last night. Alton Brown's true colors were not very attractive either.
I'm one of their original viewers and they really disappointed me. I hope Besh turns up somewhere because I know I'll watch him. Symone – take him or leave him but that soul patch turns my stomach.
I agree with the comments from Anchorage. Besh definitely should have won. Besh is the person who beat Bobby Flay in previous competition, so Flay should have recused himself from voting! If I remember correctly, Symon previously lost to Cat Cora. What a sham!!!
clearly the two best chefs in the competiton ended up in the finale. The fact that all three Iron Chefs picked Symon says a great deal about the difference between being a great chef and being a great chef with a great personality who can make a dish go supernova with any ingredient thrown his way. Besh has been more consistent, but I would rather be blown away most of the time than be simply satisfied all of the time.

I am pleased the Symon won! He won multiple challenges and was defintely more entertaining to watch. I'm surprised people find/found him abrasive. However, I guess they'd be surprised that I found Besh pompous and over confident, as if he felt intitled to win.
I think the decision was fair. Symon was great and he has a great personality, was not overconfident at all, and in the end I think he really produced dishes that focused around the swordfish. Besh did not. His dishes were no even close to what Symon produced. Great show!!
Mr. Besh is a chef with class; Mr. Symon is a cook with brass and I strongly disagreed with the result of the competition.
I won't bother watching any future episodes as I find the premise of the show boring and of no educational value. Alton Brown's "Good Eats" is a heck of a lot more fun and certainly a thousand times more educational.
Frankly, in the real world the title IC really means nothing except to the Food Network people. That said, hopefully Mr. Symon will now be able to afford to buy a jacket and tie.
I was pulling for Chef Bewsh, but I felt that the two finalists truly deserved to be there. There have been many comments that Chef Symon is abrasive, but compared to Chris Consentino, Michael Wymon is laid back! I HAD hoped that, like The Next Food Network Star, they would have allowed the viewers to vote, whch would have made it seem less like the Food Network already chose its next star even before the first "test". Ultimately, it felt "prejudged", especially in light of, as others have pointed out, some of the negative comments about Chef Symon's final dishes.
it is redicilous that symon won the competition looks like it it was whole set up just to degrade chef besh cause he is the only chef who defeated their best iron chef bobby flay in regular kitchen stadium competition so boby flay was definately bias to chef besh and we can see the result in favor of symon who was a looser and just because of some inside shoulder who got this title
Besh should have won. He has class. Symon is abrasive and annoying. I won't be watching him
I am sick that Symon won! John Besh is the better chef no doubt about it! Symon's abrasive and loud "personality" will bring the show's class down…needless to say I no longer watch the show.
I am SO happy that Chef Symon is the new iron chef!! he deserves it and it's so much fun watching him! plus, his laugh is contagious!
I agree with previous comments that Chef Symon may have been a Network Choice. I think he will learn quick and be a better TV personality than Chef Besh.
It's interesting to look at some of the criteria used in the Iron Chef series. The liked John Besh as the most consistent; they liked Simon as the occasional burst of flavor though inconsistent.
Also, John Besh's specialty is French cuisine, which Iron Chef never seems to like. He also uses subtle, complex flavor profiles, as opposed to the bold, jazzed up versions which most of the Iron Chef's seem to favor.
Iron Chef is a great title, it's still ultimately just a TV show. Great chefs and restaurateurs are obviously not always geared to a certain TV milieu.
Oh my gosh I can't believe Chef Symon won! Why because it seems like when I vote for something they never win… I was totally hoping and squealed and clapped when he did… I am so excited… Woo hoo!!! What I luv about Chef Symon seems so genuinely nice and sincere but still competetive not like some of the others seemed kind of mean, so so inventive and AWESOME under pressure, so cool how he just starts working away with the goal of what he wants to do and to the viewer you're like amazed going no way… Totally original blow you away in the blink of an eye…
Symon, I'm sure, is a fine chef. I find his personality, however, to be abrasive, and his manner loud and crude. I still believe Besh was (and is) the better chef. His technique is impeccable and his presentation elegant. He is a gentleman in every sense of the word. Sadly, I won't be watching Iron Chef when Symon is the chef of the day. That, of course, is what the remote control is for.
Symon was clearly the choice of the network execs because they felt he would be a better ratings booster with his bubbling personality. It is impossible to conceive that he could have won the contest based on his cooking when at least two of his preparations were described as bland and improperly seasoned. Those are the two most severe criticisms that can be leveled against any Chefs work. Saying the he won despite those criticisms is like saying some driver won the Indie 500 somehow despite neglecting to start their car engine. Rediculous! Besh clearly had a greater skill level and his preparations were more varied and complex by far. Where was Batali? It seems funny that the winningest of all the Chefs didn't even show up to judge the work of one of the only chalengers (Besh) to ever beat him. Perhaps he was absent because he refused to participate in what he knew was a rigged contest.

I love your personality and smiling happy eyes and look forward to watching Iron Chef now more than ever. Your cooking style is fantastic and you have such passion for cooking. I agree with Renee that Chef Besh can come across as being conceited. Even though a great chef I would not enjoy watching him.

I watched you throughout the whole show and I was behind you all the way. I think the judges made a mistake in not picking you as you are more of an Iron Chef than Michael Symon will ever hope to be.

I respect the talents of all of the chef – however to me (and I know it’s just an opinion) Chef Besh can come across as being conceited. i've been routing for both you and besh pretty much the entire time. however, you're both on extreme opposite sides of the spectrum. you stay very "down and dirty", down to earth, fun, somewhat sloppy, but very able to pull it off with class. besh is very prim, proper, collected. you guys have been going head to head ever since the beginning, and even though i know that the next iron chef series is over by the time i send this to you, just remember, whoever wins, it is completely by chance. by this time you've both proven yourselves more than worthy.

I especially liked your comment that people are trying more "foodie" dishes at your restaurants. I admit that I enjoy the "nothing is too wierd for Portland" mentality of acceptance here — but in the same breath, things are so much sweeter when you have to fight for them. Yay Cleveland!
We are rooting for Michael to win the Next Iron Chef. I've eaten at his restaurants and they are always an adventurous treat! He was one of the first in a group of chef owned restaurants in the Tremont Area in Cleveland. The area is now known for fine restaurants, art galleries and young professional residents. My son who is an architect just moved there. I love Michael's attitude in this competition. He has all the qualities of a winner!
